"Nyumen, Seasonal Cuisine and Nara Sake" event held. The first guest brewery "Chiyo Sake Brewery, Gose City, Nara Prefecture"

At ON TOKYO, together with writer Chieko Fujita, who is also a sake advisor, we will hold an event called “Nyumen, Seasonal Cuisine and Nara Sake” that regularly welcomes sake breweries as guests.


The first event will be held on Saturday, September 9, 2023. We invite Mr. Tetsuya Sakai, the chief brewer of the famous sake brewery "Chiyo Shuzo" ​​in Gose City, Nara Prefecture, as a guest.


Based on the theme of "enjoying sake more deeply by understanding the background of the brewery", the two brands "Shinomine" and "Kushira" brewed by Mr. Sakai will be combined with ON TOKYO's Japanese and Western dishes, each with their own individuality. We will look for differences. The taste of sake alone starts with sake tasting. After that, please enjoy the story of sake brewing and how it will blossom with the combination of dishes.

Brewery Tetsuya Sakai

Chiyo Sake Brewery is a sake brewery founded in 1873. The current brewery owner, Tetsuya Sakai, is a brewery master brewer who cultivates rice suitable for sake brewing in his own rice fields around the brewery and works in collaboration with the agriculture and brewing industries. The Kushira brand is brewed using Yamadanishiki grown in the Kushira area in front of the brewery. “Shinomine” is a brand that draws out the uniqueness of various sake rice such as Omachi, Aiyama, Hattannishiki, and Kamenoo. Chieko Fujita

Writer. His publications include Nihon no Daiginjo 100, The Work of a Toji (Shinchosha), and Bishu no Sekkei (Magazine House). During the serialization of "Jizake no Hoshi" in the magazine "Amakara Techo", he interviewed 33 breweries in Kansai including "Chiyo Sake Brewery". Contributed many articles to the sake special issue of the food magazine “dancyu”.
